Remember the viral baked feta pasta that took social media by storm? The original recipe takes 40-45 minutes in the oven — and that's just for the feta and tomatoes to cook! So, we decided to make a one-dish version that takes less than 15 minutes, start-to-finish, in the microwave, using the Large Deep Dish.

All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work — and work well.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Dish

The Large Deep Dish

Ingredients

  • 4 oz spaghetti, broken in half
  • 1 cup water
  • ½ cup cherry tomatoes, halved
  • 1 tablespoon butter
  • 4 oz feta
  • Salt, to taste
  • Pepper, to taste

Preparation

  1. Place the halved spaghetti, water, cherry tomatoes, butter, garlic, and feta in the Anyday dish. Cover with lid (knob lifted).
  2. Cook in the microwave for 11 minutes.
  3. Toss the pasta to combine the feta with the remaining starchy pasta water. (It will thicken and coat the noodles with a creamy sauce.)
  4. Season with salt and pepper to taste.

Serving suggestions & tips

  • Swap spaghetti for your favorite pasta shape.
  • Add capers, olives, and anchovies for a puttanesca-style sauce.
  • Add some basil or ready-made pesto for extra flavor.

Recipe notes

  • When reheating leftovers, sprinkle 1-2 tablespoons of water into the dish to create steam and slightly loosen the sauce.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
