Watch as garlic magically transforms into soft, spreadable cloves that are packed with flavor! There’s no need to turn on the oven— whole cloves of garlic are slow-cooked in olive oil to achieve sweet, tender roasted garlic to stir into soups, spread on toast, or blend into hummus.
All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work — and work well.

What You’ll Need
Ingredients
- 6 oz (170g) whole peeled garlic cloves, about 1 ½ cups
- 1 cup (250ml) olive oil
- 1 sprig fresh thyme or rosemary, optional
Preparation
- Add garlic, olive oil, and herbs (if using) to an Anyday Deep dish. The garlic should sink under the oil. If your garlic floats to the top, make sure to place a paper towel to ensure the garlic is fully submerged.
- Cover with lid (knob lifted) and cook in the microwave at Power Level 5tooltip for 10-12 minutes.
- or until the garlic is soft and mashable.
- Allow to cool completely. Store garlic confit in the refrigerator for up to 1 month.
Serving suggestions & tips
- Spread on toast for bruschetta.
- Stir into tomato sauce for extra flavor.
- Blend into hummus, babaganoush, or aioli for a flavorful dipping sauce.
- Blend into water or stock to cook rice, pasta, or vegetables.
Recipe notes
- The garlic should not float. If it does, make sure to place a paper towel over it and keep an eye on the cooking time.
- You can use any oil you have available, regular veggie or olive oil.
- If using pure olive oil, you can freeze the oil and garlic in the 2 Tablespoons Anytime Freezer Trays, and save until needed for up to 6 months.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
