One-Dish Chicken, Orzo, and Feta
//cookanyday.com/cdn/shop/products/ANYDAY_Q3_SHOOT11458_360x.jpg?v=1629159757
This one-dish meal is a celebration of Mediterranean flavors. Juicy chicken thighs are simmered in stock that's soaked up by a light (but filling) orzo pasta. Our favorite part: when heated, the crumbled feta softens into pockets of salty, creamy goodness. Serve it with a garnish of mint for a fresh summer meal.
All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work — and work well.

Serving suggestions & tips
- Add chopped black olives to the orzo pasta while it cooks for a Mediterranean twist.
- For some spice, sprinkle chili flakes.
- Add 1 tablespoon of store-bought breast or tenders drumsticks if thighs are unavailable.
Recipe notes
- When reheating leftovers, sprinkle 1-2 tablespoons of water into the dish to create steam and slightly loosen the sauce.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
