To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Small Dish

Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon shallots, finely chopped
  • 3 cremini or white mushrooms, thinly sliced
  • 1 sage leaf
  • 2 tablespoons all-purpose flour, or cornstarch
  • ¾  cup (175ml) stock (beef, chicken, turkey or vegetable)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Preparation

  1. Place the butter in the Anyday dish, and microwave until the butter melts completely about 30 seconds.
  2. Add the shallots, mushrooms, and sage and cook in the microwave for 2-3 minutes.
  3. Add the remaining ingredients and continue cooking for 3 minutes, stirring halfway to prevent overflowing
  4. Whisk the thickened gravy. If needed, continue cooking until it thickens to your liking in 30-second intervals. NOTE: The gravy will continue to thicken as it cools.
  5. Season to taste with salt and pepper. Allow the sauce to cool and use as desired.

Serving suggestions & tips

  • Enjoy it as a base for a basic green bean casserole.
  • Serve it over warm biscuits for a delicious breakfast
  • Use a mixture of mushrooms for a fancy sauce.

Recipe notes

  • Make it ahead of time and freeze in the 2 Tbsp Anytime Freezer Trays and use as needed. 
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
