Microwaving carrots requires a fraction of the time they take to roast in the oven, while still bringing out their natural sweetness. To finish, add some char by throwing them in a hot pan or broiling for a couple minutes.

- Peel carrots and cut into 1” pieces. Place in an Anyday dish.
- Add 1 tablespoon water per cup of carrots. Cover with the lid (knob lifted).
- Cook in the microwave for the time listed in the table, or until carrots are tender, but not mushy. Stir halfway through the cook time for even cooking.
- Toss with olive oil, salt, and pepper for a quick side dish.
