The best potatoes are crispy potatoes. We pre-cook whole marble potatoes in the microwave to get them soft and creamy, and then smash them to get those nooks and crannies crunchy in the oven. Eat them as-is or load them up with your favorite toppings!

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • ½ lb (225g) marble potatoes, rinsed
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Sour cream for garnish
  • Chives or parsley for garnish

Preparation

  1. Preheat the oven to 450°F.
  2. Add potatoes, oil, salt, and pepper into the Anyday dish and stir to coat. Cover with the lid (knob lifted).
  3. Cook in the microwave for 6 minutes stirring halfway through, until potatoes are easily pierced with a fork.
  4. Evenly distribute potatoes on a baking sheet lined with parchment paper or aluminum foil. Using a fork, back of a spoon or the bottom of a measuring cup, gently smash each potato to about ½” height. (Thinner potatoes will be crispier!)
  5. Crisp in the oven at 450°F for about 20 minutes or until you see the potatoes’ edges become golden-brown and crispy. Season to taste.

Serving suggestions & tips

  • Toss crispy smashed potatoes with sautéed garlic and fresh herbs.
  • Mix with steamed broccoli for a delicious side dish.
  • Season with chili crisp for extra flavor and spice.

Recipe notes

  • Cook the potatoes up to 5 days ahead, then smash and crisp up when needed.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
