The beauty of Joshua McFadden’s granola lies in its simplicity. Unlike many granola recipes that call for expensive nuts, dried fruits, and other mix-ins, McFadden’s ingredients list is super minimal, relying on coconut flakes, pumpkin seeds, and sunflower seeds to add flavor and texture to the finished product. While the recipe may be simple, the flavor is anything but. Once you start munching on this granola, you won’t be able to stop. You might even say that it’s “truly irresistible.”

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • ½ cup (50g) rolled oats (not instant)
  • 2 tablespoons (5g) coconut flakes
  • 2 tablespoons (17g) pumpkin seeds
  • 2 tablespoons (17g) sunflower seeds
  • 1 tablespoon water
  • 1 tablespoon maple syrup
  • 1 tablespoon brown sugar
  • tablespoons olive oil
  • Salt, to taste

Preparation

  1. Combine all the ingredients into the Anyday dish and mix to combine.
  2. Cook uncovered in the microwave at Power Level 5tooltip for 5 minutes, until the oats begin to lump together and are still slightly wet.
  3. Stir the granola and continue cooking uncovered at Power Level 5tooltip for 2 minutes. For even browning, stir again halfway through the cooking time.
  4. Allow the granola to cool before enjoying it right away or saving it for later.

Serving suggestions & tips

  • Throw in any nuts or dried fruit you already have on hand.
  • Sprinkle over a bowl of yogurt for a breakfast treat.
