Build a deeply flavorful pomodoro sauce in a super short amount of time using sliced onions, crushed tomatoes, herbs, and olive oil. Serve this all-purpose sauce with leftover pasta, use it as a dipping sauce for mozzarella sticks or crusty bread, or store it in the freezer for the next time you’re making a lasagna.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • ½ (60g) yellow onion, thinly sliced
  • 1 sprig of thyme
  • 2 tablespoons olive oil
  • 1 14oz (400g) can of crushed tomatoes
  • 2 basil leaves, thinly sliced
  • ½ teaspoon salt
  • 1 tablespoon unsalted butter

Preparation

  1. Place the onion, thyme, and oil into the Anyday. Cover with the lid (knob lifted). Cook in the microwave for 2 minutes, or until onions have softened.
  2. Add the crushed tomatoes and basil and continue to cook for 4-5 minutes, or until the tomatoes begin to bubble.
  3. Mash the ingredients with a potato masher or fork. You may also blend the sauce with a blender or immersion blender if you like your sauce smoother.
  4. Season with salt and butter.

Serving suggestions & tips

  • Add cooked pasta to the sauce and finish with grated parmesan cheese.
  • Add garlic powder along with the onions for a richer flavor.
  • Add frozen meatballs alongside the crushed tomatoes.
  • Drizzle in some heavy cream at the end for a silky smooth finish.

Recipe notes

  • Once ready cool the sauce, then portion in the Anytime Freeze Trays and reheat as needed.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
