If rice pudding is the lazy cook’s favorite dessert, our version is even easier. We challenge you to spot the difference between this take and the stovetop version! Cornstarch is the culprit behind the cloud-like, creamy texture. Lemon peel adds a tangy freshness to stave off any pudding-induced food comas.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • ½ cup (90g) arborio or short-grain rice
  • 1 tablespoon sugar
  • teaspoon salt
  • 1 strip lemon peel
  • 1 tablespoon raisins
  • ¾ cup (180ml) water
  • teaspoons cornstarch
  • ¾ cup (180ml) evaporated milk
  • ½ teaspoon vanilla extract

Preparation

  1. Add the rice, sugar, salt, lemon peel, raisins, and water to the Anyday. Stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave at Power Level 3tooltip for 22 minutes.
  3. , or until most of the liquid has been absorbed.
  4. In a separate bowl, mix the evaporated milk and vanilla extract with the cornstarch. Add to the rice mixture and stir.
  5. Cover and cook at full power for 1-2 minutes, stirring halfway into the cooking time
  6. Stir the rice while it cools for 30-45 seconds, which will help thicken the pudding. Serve warm or cold with your favorite topping. Try it with cinnamon or dulce de leche for a Latin-inspired twist!

  • Top with cinnamon for a classic dessert.
  • Try it with a dollop of dulce de leche.
  • Try it with lime or orange peel.

Recipe notes

  • Adjust the power level by 1 as needed — increase if it’s taking longer than expected, or decrease if it’s bubbling over.
  • The pudding will thicken as it cools down. If you like a looser consistency, thin it out with some regular milk right before serving.
  • Freeze the rice pudding in the Anytime Freezer Trays, then reheat when needed with an extra bit of milk.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
