Store-bought granola is often loaded with hidden sugar, which makes the homemade version all the more worth your time. Rolled oats are lightly coated in maple syrup and toasted to perfection alongside your favorite nuts and seeds and cranberries. Paired with yogurt or milk, this is one endlessly customizable recipe you won’t hit snooze on.
All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work — and work well.
What You’ll Need
What You’ll Need
Ingredients
- ½ cup (50g) rolled oats (not instant)
- ¼ cup variety of nuts and seeds, such as pecans, sunflower seeds and/or pumpkin seeds
- 1 tablespoon water
- 2 tablespoons maple syrup, or honey
- 2 tablespoons coconut oil
- 2 tablespoons dried cranberries (optional)
Preparation
- Add the oats, nuts and seeds, coconut oil, water, and maple syrup into the Anyday dish. Stir well until fully combined.
- Cook uncovered in the microwave at Power Level 5tooltip for 5 minutes, or until the oats have started to brown a bit but are still slightly wet.
- Thoroughly stir the granola and continue cooking uncovered at Power Level 5tooltip for 2 minutes. If you’d like the granola more brown, continue adding more time at the same power level in 1-minute increments, stirring each time.
- Toss in the cranberries. Transfer the mixture to a plate in an even layer. Allow the granola to fully cool to room temperature, which will crisp it up.
Serving suggestions & tips
- Enjoy over yogurt, with milk, or sprinkle over fresh fruit.
- Add chocolate chips once the granola cools for a trail mix treat.
Recipe notes
- Save in an air-tight container for up to 1 month.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
