Potatoes take notoriously long to boil, which seems unreasonable given their simple, clean taste. No need to watch the pot with this recipe — under 10 minutes in the microwave steam the potatoes to perfection. Chef Dave Chang pairs his potatoes with yuzu kosho mayo, a punchy dip made from yuzu (a fragrant Japanese citrus fruit), chiles, and salt.

Ingredients
- 5 oz (140g) fingerling potatoes
- Salt, to taste
- ¼ cup (55g) mayonnaise
- 2 teaspoons yuzu kosho
Preparation
- Place potatoes in the Anyday dish. Rinse potatoes and drain. Season with salt, then cover with the lid (knob lifted).
- Cook in the microwave for 6 minutes, or until the potatoes are fork-tender.
- While the potatoes are cooking, mix the mayo and yuzu kosho until a smooth sauce is formed. Serve the potatoes alongside the sauce and enjoy.
Serving suggestions & tips
- Add some chopped parsley for a fresh touch.
- Try it with some cayenne pepper for a spicy twist.
