The Medium Deep Dish

Ingredients

  • 2 tablespoons brown butter
  • ¼ teaspoon dried thyme
  • 2 cups (240g) frozen corn, thawed
  • 2 tablespoons all-purpose flour
  • ¾ cup (200ml) whole milk
  • 1 teaspoon sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • teaspoon cayenne pepper
  • teaspoon nutmeg (optional)
  • Fresh thyme, for garnish (optional)

Preparation

  1. Add the brown butter, dried thyme, corn, flour, milk, sugar, salt, garlic powder, cayenne, and nutmeg to an Anyday dish and stir to combine.
  2. Cover with lid (knob lifted) and cook in the microwave for 5-6 minutes, or until the corn is thick and creamy.
  3. Top with chopped parsley and serve.

Serving suggestions & tips

  • For a vegan-friendly alternative, substitute butter and milk for plant-based alternatives.
  • Top the creamy corn dish with crumbled bacon, fried shallots or toasted breadcrumbs.
