The Large Shallow Dish

Ingredients

  • 2 cups (200g) riced cauliflower
  • 2 4-oz (115g each) pieces frozen arctic char, cod, halibut, or salmon
  • 4 teaspoons soy sauce
  • Chopped scallions or cilantro, for garnish (optional)

Preparation

  1. Add riced cauliflower to an Anyday dish, spreading it into an even layer.
  2. Place the frozen fish on top of the cauliflower and drizzle with soy sauce. Cover the dish with the lid (with the knob lifted).
  3. Microwave for 10 minutes, or until both the fish and cauliflower are cooked and tender. (Cooking time will depend on the thickness of your fish fillets. Thinner fillets will be ready sooner while thicker ones may take a bit longer. If you're unsure, check the fish every 30 seconds after the 3-minute mark.)
  4. Carefully remove the skin from the fish and finish with a drizzle of soy sauce, chopped cilantro, or scallions—or enjoy it as is!

Suggestions

  • Top with bean sprouts or watercress for crunch and freshness.
  • Drizzle some chili crisp on top of cooked salmon and cauliflower for some heat.
  • Garnish with toasted sesame seeds for a bit of nuttiness.
