Chef David Chang knows how to jazz up frozen veggies, and this simple succotash is no exception! Paired with savory bacon (also cooked in the microwave) and fresh onion, you’ll never be able to tell that this simple side came from the freezer — or cooked in the microwave.

Ingredients
- 1 strip thick-cut bacon, cut into small pieces
- ¼ cup (30g) diced yellow onion
- ½ garlic clove, finely chopped
- ½ cup (60g) frozen corn
- ½ cup (75g) frozen lima beans
- ⅛ teaspoon kosher salt
- 1 pinch of black pepper, ground
- ½ tablespoon unsalted butter
- ½ scallion, chopped (optional)
Preparation
- Add the bacon, onion, and garlic to the Anyday and cover with the lid (knob lifted).
- Cook in the microwave for 2 minutes, or until the bacon has rendered and the onions are partially cooked.
- Add the frozen corn, lima beans, salt, pepper, and butter and continue cooking for 1-2 minutes, or until the vegetables are warm and the bacon is fully cooked.
- Stir well to combine and garnish with chopped green onions, if desired.
Serving suggestions & tips
- Add some cotija cheese, tajin, and lime juice for an “elote” twist.
- Keep it vegetarian by removing the bacon.
- Add cherry tomatoes, chopped bell peppers, and cooked black beans for a filling side dish or chilled salad.
Recipe notes
- This recipe will work with fresh corn kernels too as well as canned fire-roasted corn.
- If you prefer to use canned vegetables, make sure you drain as much liquid as you can before using.
- Freeze the succotash in the Anytime Freezer Trays for up to 2 months for a quick addition to soups, grain salads, and more.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
