This straightforward take on the classic Hainanese dish is not only delicious but also easy to prepare. Chef Dave's quick rice technique is a great way to cook both rice and chicken at the same time. The ginger and scallion sauce makes for the perfect bright and savory addition to this simple and delicious dish.

The Medium Deep Dish

Ingredients

For the garlic and scallion sauce:

  • 2 garlic cloves, finely chopped
  • 1 tablespoon grated ginger
  • 1 teaspoon Momofuku Savory Salt
  • 4 tablespoons of vegetable oil
  • 4 scallions, thinly sliced (green part only)

For the chicken and rice:

  • 1 cup (225ml) water, dashi, or stock
  • 1 teaspoon Momofuku Savory Salt
  • 1 tablespoon soy sauce or tamari
  • ½ cup (95g) white rice, rinsed
  • 2 (8 oz) medium boneless skinless chicken thigh, cut into 1/2” thick slices
  • Momofuku Chili Crunch, for serving (optional)
  • Garlic and scallion sauce, for serving (optional)

Preparation

  1. For the garlic and scallion sauce: place the garlic, ginger, and oil in the small Anyday dish, cover with lid (knob lifted), and cook in the microwave for 1-2 minutes, or until the oil heats up and the garlic begins to lightly toast. Add the seasoning salt, pour the hot oil over the sliced scallions, and combine. Set the sauce aside
  2. For the chicken and rice: Mix the water, savory salt, soy sauce, and the rinsed rice into an Anyday Deep Dish and stir to combine.
  3. Add the sliced chicken on top of the rice, neatly overlaying each slice into a flower-like pattern. This will help cook the chicken quickly and evenly.
  4. Cook in the microwave uncovered for 15 minutes, or until the water has evaporated and the rice is cooked. Note: Some foaming is expected, but should not overflow.
  5. Transfer the Anyday dish to the counter, cover with the lid, and rest for 5 minutes to allow the rice to finish cooking.
  6. Serve with Momofuku Chili Crunch or Garlic and Scallion Sauce.

Serving suggestions & tips

  • Add grated fresh ginger to the broth for extra flavor.
  • Top with a poached egg for extra richness.

Recipe notes

  • Substitute water with dashi or chicken or vegetable stock for extra flavor.
  • If you don’t have Momofuku Savory Salt, use a mixture of equal amounts of salt and black pepper to replace the indicated amount per serving.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
