Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt, to taste
  • 3 tablespoons coconut oil (or vegetable oil)
  • 1 tablespoon grapefruit zest
  • cup (80ml) grapefruit juice
  • cup (80g) plain greek yogurt
  • 8 raspberries, plus extra for decorating
  • 2 teaspoons slivered almonds, toasted 
  • powdered sugar, as needed

Preparation

  1. In a separate medium bowl, mix all the ingredients except the almonds and powdered sugar, until a smooth batter forms, then set it aside.
  2. Grease the Anyday dish with butter or non-stick spray. (If you’d like to unmold the cake after cooking, line the bottom with a fitted piece of parchment paper).
  3. Pour the batter into the Anyday. Sprinkle the slivered almonds on top.
  4. Cook uncovered in the microwave for 6-7 minutes, or until a toothpick inserted into the center comes out clean. If the cake looks slightly undercooked, continue cooking in 1-minute intervals. Let rest with the lid on for 5 minutes, which helps ensure the cake can unmold without breaking.
  5. Let cool for 5 minutes, then decorate with extra raspberries and a dusting of powdered sugar to serve.

Serving suggestions & tips

  • Enjoy the cake as an afternoon snack or serve it with ice cream or whipped cream for a quick dessert.
  • Mix fresh grapefruit juice and enough powdered sugar to make a smooth glaze to drizzle over the cake.
