To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • 1 cup (160g) grated apple
  • 1 cup (100g) almond flour
  • ¼ cup (30g) walnuts, chopped
  • ¼ cup (75g) honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 2 eggs
  • powdered sugar, optional

Preparation

  1. Place all the ingredients into a large bowl and mix until fully incorporated. Lightly spray the Anyday dish with vegetable spray, then line the bottom with a fitted cutout piece of parchment paper. Pour the batter into the dish.
  2. Cook uncovered in the microwave for 7-8 minutes, or until the apple cake is bouncy to the touch and a toothpick inserted in the middle comes out clean.
  3. Allow to rest for 1 minute. Run a knife around the edges of the bowl to loosen it. Place a flat serving plate on the bowl and carefully flip the vessel to unmold the cake.
  4. Remove the parchment paper and allow it to cool before cutting.

Serving suggestions & tips

  • Top with a simple lemon glaze for a decadent twist.
  • Add chocolate chips to the batter for a sweeter twist.
  • If apples are unavailable, use firm pears.

Recipe notes

  • All apples will make a great cake; however, we recommend Honeycrisp, Fuji, or Gala for their flavor and moisture levels.
  • You can cook the cake in the Anytime Freezer Trays for 2-3 minutes per tray or until each muffin is cooked through and feels bouncy when gently pressed
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
