This chili recipe packs a lot of heat and flavor into one dish. We use all the classic ingredients — pinto beans, jalapeños, chili powder, tomatoes — plus diced pre-cooked hot links for ease. If you want your chili a little milder, any simple precooked sausage would work.

Ingredients
- 1tablespoon olive oil
- ½ cup (60g) diced onion
- ½ cup (60g) diced bell pepper
- 1 medium jalapeño, seeded and small dice
- 2 cloves garlic, minced
- 1½ teaspoons chili powder
- 1 teaspoon smoked paprika
- salt, to taste
- 1 (85g) precooked hot link, large dice (such as Evergood)
- ½ 15.5oz can pinto beans, drained
- ½ 14.5oz can diced tomatoes
- ¼ cup (60g) chicken stock or water
Preparation
- Combine olive oil, onion, bell pepper, jalapeño, garlic, chili powder, smoked paprika, and salt in the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 4-5 minutes, or until vegetables are tender.
- Add hot links, pinto beans, canned tomatoes (including juices), and stock. Stir to combine. Cover and cook for 7-8 minutes, or until chili has thickened slightly and flavors have melded.
Serving suggestions & tips
- Finish with sour cream, cheddar cheese, and chopped fresh chives.
- Serve over rice or corn chips.
- Makes excellent leftovers — this chili is often even better the next day!
Recipe notes
- Freeze the chili in the Anytime Freezer Trays and reheat as needed.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
