Typical sweet potato sides tend to edge toward too sweet. This version cedes the dessert table to the sweet potato pie. Apple cider vinegar adds tanginess to the maple, while black pepper brings heat and balance. We like to top ours with blue cheese or bacon — no marshmallows here!

The Small Dish

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon maple syrup
  • ½ tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 1 (170g) medium sweet potato or yam, peeled and sliced in ½-inch thick slices

Preparation

  1. Add butter to the Anyday dish and melt in the microwave. Add maple syrup, apple cider vinegar, salt, and pepper and mix well. 
  2. Add the sliced sweet potatoes and toss with butter mixture, making sure potatoes are well-coated. Cover with the lid (knob lifted). 
  3. Cook in the microwave for 5-6 minutes, or until the sweet potatoes are soft and fully cooked. Cool for 1 minute with the lid on. 
  4. Spoon the maple butter over the yams and serve.

Serving suggestions & tips

  • Finish sweet potatoes with crumbled blue cheese or feta cheese.
  • Once cooked, sprinkle the top with candied nuts for crunch.
  • Try it with chopped crispy bacon or pancetta.

Recipe notes

  • Substitute butter for 2 pieces of chopped bacon (regular or maple bacon) and cook until crisp and the fat has rendered (about 3 minutes). 
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
