Ingredients
- 2 teaspoons sesame oil
- 2 tablespoons fresh ginger, grated
- 2 cloves garlic, very thinly sliced
- ¼ cup (30g) shredded carrots
- ¼ cup (30g) celery, thinly sliced
- 2½ cups (600ml) low-sodium chicken or vegetable broth
- 1 tablespoon soy sauce or tamari
- 1 head baby bok choy, sliced or quartered
- Thinly sliced scallions, optional
Preparation
- Add the sesame oil, ginger, garlic, carrots, celery, chicken broth, soy sauce, and bok choy to the Anyday dish and stir to combine. Cover with lid (knob lifted).
- Cook for 8-9 minutes, or until the bok choy is tender and the broth comes to a simmer.
- Serve hot and top with scallions, if desired.

- Add some shredded rotisserie chicken or diced tofu for a heartier dish.
- Add a poached egg for extra creaminess, protein, and nutrition.

Recipe notes
- Portion soup into the Anytime Freezer Trays and store in the freezer overnight. Reheat as needed.
