Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • 2 teaspoons sesame oil
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, very thinly sliced
  • ¼ cup (30g) shredded carrots
  • ¼ cup (30g) celery, thinly sliced
  • cups (600ml) low-sodium chicken or vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 head baby bok choy, sliced or quartered
  • Thinly sliced scallions, optional

Preparation

  1. Add the sesame oil, ginger, garlic, carrots, celery, chicken broth, soy sauce, and bok choy to the Anyday dish and stir to combine. Cover with lid (knob lifted).
  2. Cook for 8-9 minutes, or until the bok choy is tender and the broth comes to a simmer.
  3. Serve hot and top with scallions, if desired.

Serving suggestions & tips

  • Add some shredded rotisserie chicken or diced tofu for a heartier dish.
  • Add a poached egg for extra creaminess, protein, and nutrition.
  • Squeeze some fresh lemon juice for a bright and light flavor.
  • Garnish with fresh shiso leaves for a unique garnish.

Recipe notes

  • Portion soup into the Anytime Freezer Trays and store in the freezer overnight. Reheat as needed.
  • Any greens will work well! Feel free to use spinach, Swiss chard, or thinly sliced kale in place of the bok choy.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
