If this sounds like something you could only order from a restaurant, think again! It’s incredibly simple to make fantastic sticky rice in an Anyday dish— no soaking required. This version is loaded with umami-richness and full of flavorful Chinese sausage.

The Medium Deep Dish

Ingredients

  • 1 teaspoon peanut or vegetable oil
  • 2 tablespoons (15g) dried shrimp, soaked for 10 minutes in warm water
  • ½ cup (60g) scallions, thinly sliced
  • 3 dried shiitake mushrooms, rehydrated in warm water then finely chopped
  • 1 link of Chinese sausage, cut into thin slices
  • ½ teaspoon shaoxing wine (Chinese cooking wine)
  • ½ tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • teaspoon sesame oil
  • ½ cup (115g) uncooked sticky rice (also known as sweet rice or glutinous rice)
  • ½ cup (120ml) chicken stock or water
  • 1/16 teaspoon white pepper

Preparation

  1. Place the oil, soaked shrimp, scallions (keeping some aside for garnish), shiitake mushrooms, and sliced sausage in the Anyday and mix to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for minutes, or until the scallions have softened.
  3. Transfer the cooked ingredients to a separate bowl and set them aside.
  4. Add the Shaoxing wine, oyster sauce, soy sauce, sesame oil, sticky rice, stock, and white pepper to the Anyday and stir to combine. Evenly distribute the reserved cooked sausage and vegetables over the rice.
  5. Cover and continue cooking at Power Level 5tooltip for 23-25 minutes. Allow the rice to rest covered for 5 minutes.
  6. Fluff the rice and top with reserved scallions.

Serving suggestions & tips

  • Substitute sticky rice for short grain rice for a similar (but less sticky!) result.
  • Enjoy topped with a poached egg for a yummy dish.
  • For a spicier twist, add some chili crisp once finished.

Recipe notes

  • You can substitute dried shiitake for fresh shiitake, though it won’t have as deep or as umami of a flavor.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
