Cooked in the microwave using Anyday cookware, this fresh pumpkin puree surpasses its canned counterpart in sweetness and flavor intensity. Let's face it, that can could have been packed last season!

Ingredients
- ½ sugar pumpkin (about 8oz), quartered and seeded
Preparation
- Place the cut pumpkin in the Anyday, nestling to fit all of the pieces.
- Cover with lid (knob lifted) and cook for 9 minutes, or until the pumpkin is fork tender.
- Allow to cool slightly. Scrape the cooked flesh from the skin and mash with a potato masher or immersion blender until smooth.
- Store for up to a week in the fridge.
Serving suggestions & tips
- Use the puree in Pumpkin Pie or Pumpkin Soup!
- Season it with butter, salt, and pepper for a different mashed side dish
- Mix it into mac and cheese for a seasonal twist.
- Add it to steamed rice for a quick “risotto”-like dish.
Recipe notes
- You can use any other type of pumpkin, as well as winter squashes.
- You can add brown butter for extra flavor.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
