Ingredients

  • ½ sugar pumpkin (about 8oz), quartered and seeded

Preparation

  1. Place the cut pumpkin in the Anyday, nestling to fit all of the pieces.
  2. Cover with lid (knob lifted) and cook for 9 minutes, or until the pumpkin is fork tender.
  3. Allow to cool slightly. Scrape the cooked flesh from the skin and mash with a potato masher or immersion blender until smooth.
  4. Store for up to a week in the fridge.
