Shrimp Scampi
Light, lemony, and garlicky, this classic shrimp scampi pulls double duty as both an easy weeknight meal or dinner party-worthy centerpiece. Tender shrimp is sauteed in a simple sauce of white wine, butter, and garlic, with red pepper flakes and cayenne for an extra kick. Serve alone, atop al dente pasta, or with crusty bread.

Ingredients
- 1 tablespoon white wine or chicken stock
- ½ clove garlic, minced
- ½ tablespoon lemon juice, plus extra for serving
- ½ tablespoon butter
- ⅛ teaspoon red pepper flakes
- ¼ teaspoon cornstarch
- salt, to taste
- black pepper, to taste
- 4 oz (115g) large shrimp, peeled, and deveined
- 1 teaspoon parsley, chopped (optional)
Preparation
- Add all ingredients except the shrimp and parsley to the Anyday dish and mix to combine.
- Cook in the microwave uncovered for 1-2 minutes, or until fragrant.
- Add the shrimp and stir until well-coated. Cover with the lid (knob lifted).
- Cook for 1-2 minutes (stirring halfway through), or until shrimp is orange and cooked through. If needed, continue cooking in 30-second intervals.
- Stir the shrimp to coat it in the sauce. Garnish with chopped parsley and a squeeze of lemon juice.
