Ingredients
- 1 lb (454g) cauliflower, medium florets
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- Salt, to taste
- 1 teaspoon lemon juice
Preparation
- Preheat broiler.
- Combine cauliflower, olive oil, smoked paprika, and salt in the Anyday dish. Toss to coat. Cover with the lid (knob lifted).
- Cook in the microwave for 4-5 minutes, or until cauliflower is fork-tender.
- Transfer the cauliflower to a baking sheet and broil for 2-5 minutes or until slightly browned. Keep an eye on it, since it may brown quickly!
- Finish with lemon juice. Customize as desired or check out some of our suggestions below.
Serving suggestions & tips
- Top with freshly chopped cilantro, parsley, chives, mint, dill, or yogurt.
- Add some black olives, and toasted almonds for a fun side dish.
- Try as an omelet filling.
Recipe notes
- If using frozen cauliflower add 1 teaspoon of water to get the steam going.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
