The Medium Shallow Dish

Ingredients

  • tablespoon olive oil
  • ½ (70g) small onion, small dice
  • 2 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes
  • 1 tablespoon tomato paste
  • ½ cup vegetable stock, divided
  • 1 cup (140g) canned chickpeas, drained and rinsed
  • 2 oz (60g) spinach
  • Salt, to taste
  • Black pepper, to taste
  • teaspoon lemon juice

Preparation

  1. Combine olive oil, onion, garlic, cumin, smoked paprika, chili flakes, tomato paste, and half of the stock in the Anyday dish. Cover with the lid (knob lifted). 
  2. Cook in the microwave for 3-4 minutes, or until spices are fragrant.
  3. Add chickpeas and the other half of the stock and stir. Cover and cook for an additional 2-3 minutes.
  4. Add spinach. It will be a tight fit, but will cook down significantly! Cover and cook for 1 minute, or until spinach is wilted. 
  5. Mix in salt, pepper, and lemon juice. Stir thoroughly. Serve while warm.

Suggestions

  • Try adding a tablespoon of freshly chopped cilantro, basil, or mint!
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
