Forget about thermometers and sticky pots! Anyday makes the perfect caramel with little-to-no effort. It’s as simple as adding all of the ingredients to the dish and cooking it in the microwave — seriously.

The beauty of this recipe is that, if you continue cooking for a few extra minutes you’ll end up with a chewy caramel, perfect for candies. Wrap squares of caramel in parchment paper and give them as gifts!

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work—, and work well. Unless specified otherwise, all recipes should be cooked at full power.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Small Dish

Ingredients

  • 2 tablespoons unsalted butter
  • ¼ cup (50g) dark brown sugar
  • 2 tablespoons heavy cream
  • ¼ teaspoon kosher or flaky salt

Preparation

For the caramel sauce:

  1. Add all ingredients to the Anyday dish and stir to combine.
  2. Cover with lid (knob lifted) and cook in the microwave for 1 minute, or until the ingredients bubble, the sugar is fully dissolved, and the ingredients are fully incorporated.
  3. Cool slightly before using, then save refrigerated for up to 1 month.

For chewy caramel:

  1. Add all ingredients to the Anyday dish and stir to combine.
  2. Cook for 1:30-2 minutes, or until the mixture looks thick and almost foamy. It should be slowly bubbling — take care when transferring the dish from the microwave. If resting the dish, place it on a heat-proof surface.
  3. Once cooked, pour the caramel into a parchment-lined tray. Sprinkle some flaky salt and allow the candies to fully set before cutting them into pieces.
