Lemon Orzo with Asparagus

Buttery orzo cooks to perfection with this one-dish wonder! Cook all ingredients together in the Anyday dish, stir and serve with extra parmesan. We love this as a vegetarian main or as a side.

Ingredients
- 2 tablespoons olive oil
- 1⅓ cups (230g) orzo pasta
- 1 teaspoon garlic powder
- 1 teaspoon salt
- Black pepper (to taste)
- 1 cup (100g) asparagus, cut into 1” pieces (about 12 spears)
- 2 tablespoons lemon zest
- 3 cups (700ml) chicken or vegetable stock
- 4 tablespoons unsalted butter
- 4 tablespoons grated parmesan cheese
Preparation
- Add olive oil, orzo, garlic powder, salt and pepper, asparagus, lemon zest, and chicken stock to the Anyday dish and stir well.
- Cook uncovered at Power Level 7tooltip for 20-21 minutes or until all the liquid has evaporated and the pasta is cooked.
- Add the butter and parmesan and stir well. Serve immediately.
Serving suggestions & tips
- If asparagus is unavailable, use green beans, sugar or snap peas or zucchini.
- Add some sour cream, greek yogurt or goat cheese for added richness.
- Add some chili flakes for an extra kick.
Recipe notes
- If orzo pasta is unavailable try it with other small pasta such as ditalini pasta.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
