- 5-6 (95g) asparagus, trimmed and cut in half
- 2 teaspoons olive oil
- salt, to taste
- black pepper, to taste
- 2 4-6 oz fillets of halibut, cod, or any white flaky fish fillet (except for tilapia)
- 2 tablespoons pesto, store-bought or homemade
- ½ cup (75g) cherry tomatoes, halved
Preparation
- Add the asparagus and olive oil into the Anyday and season with salt and pepper. Mix to combine.
- Season both sides of the fish with salt and pepper. Spread the pesto over the fish (you may cut the fish into portions or keep the filet whole), and place it over the asparagus. Cover with the lid (knob lifted).
- Cook in the microwave at Power Level 5tooltip for 5-6 minutes, or until the fish is cooked to your desired doneness
- Add the cherry tomatoes and serve.
