Curry in a hurry, made easy! We paired A Dozen Cousin’s ready-to-reheat Trini Chickpeas with potatoes and rice for a simple side dish, made in the microwave. Add chicken or pork for a complete meal!

Ingredients
- 2 teaspoons vegetable oil
- 1 small russet potato, peeled and diced into 1” pieces
- 1 (8 ounce) package A Dozen Cousins Trini Chickpea Curry
- 1 (8 ounce) package A Dozen Cousins Sea Salt Bone Broth Rice, warmed to package directions
- 1 tablespoon plain greek yogurt (optional)
- Chopped fresh cilantro (for serving)
Preparation
- Add the oil and potatoes to the Anyday dish and stir to combine. Cover with lid (knob lifted) and cook for 2 minutes.
- Add the A Dozen Cousins Trini Chickpea Curry and continue cooking for 2 minutes, or until the curry has warmed up enough.
- Serve with A Dozen Cousins Sea Salt Bone Broth Rice, greek yogurt (if desired), and garnish with chopped cilantro.
Serving suggestions & tips
- Enjoy with naan on the side.
- Bulk up this meal with shredded chicken, frozen peas, carrots, or other desired vegetables.
