Ingredients
- 2 15oz cans (950g) of canned black beans, drained
- 2 (50g) jalapeños, seeded and diced
- 1½ cups (460g) vegetable stock (or chicken stock)
- 1 tablespoon chipotle adobo purée
- 1 teaspoon garlic powder
- 2 teaspoons dried oregano
- ½ teaspoon ground cumin
- salt, to taste
Preparation
- Combine all ingredients in the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 12 minutes, or until ingredients are fork-tender and the liquid is slightly thickened.
- Using an immersion blender, blend all ingredients until they are as smooth or as chunky as you like.
Serving suggestions & tips
- Garnish with sour cream, avocado, freshly chopped cilantro, a squeeze of lime, or cotija cheese!
- Add shredded chicken or silken tofu for a protein-packed meal.
- Try the soup with kidney beans or cannellini beans for great results
Recipe notes
- Freeze in the 1/2 Cup Anytime Freezer Trays and reheat when needed.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
