The Medium Deep Dish

Ingredients

  • ¼ cup (30g) diced white onion
  • 2 garlic cloves, finely chopped
  • ¾ cup (7 ounces) fire-roasted tomatoes
  • 1 tablespoon finely chopped chipotle pepper in adobo sauce
  • ¼ teaspoon dried oregano
  • teaspoon ground coriander
  • teaspoon cumin
  • 2 cups (200g) shredded chicken
  • 1 cup (120g) cooked white or brown rice, for serving
  • Chopped cilantro, sour cream, salsa, and refried beans for serving (optional)

Preparation

  1. Place the onion, garlic, fire-roasted tomatoes, chipotle peppers, and seasoning in the Anyday dish and stir to combine.
  2. Cover with lid (knob lifted) and cook for 4-5 minutes, or until the sauce is bubbling and the veggies are tender.
  3. Add the shredded chicken and mix until well-coated. Continue cooking for 2-3 minutes, or until warmed through.
  4. Serve with warm rice and garnish with chopped cilantro, salsa, sour cream, and refried beans if desired.

Suggestions

  • Have leftover chipotle peppers? Use Anytime Trays to freeze and save for later.
  • Top the bowl with crumbled cotija cheese, shredded cabbage, and fresh lime juice and enjoy as is or with tortillas on the side

Recipe Notes

  • Use brown rice, quinoa, or riced cauliflower for a low-carb substitute.
  • If available, use a hand or stand mixer to easily shred the chicken.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
