This colorful Indian classic combines sweet red peppers and crispy potatoes into an elevated vegetarian-friendly meal or side. A spritz of lime juice adds an extra flavor pep. Priya suggests pairing it with tortillas and scrambled eggs for an Indo-Texan breakfast taco. This recipe was adapted from Priya's cookbook, Indian-ish: Recipes and Antics from a Modern American Family.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

Dish

The Large Shallow Dish

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 small yellow onion, cut into ½ inch pieces (about ½ cup or 60g)
  • 2 medium red bell peppers, cut into ¾ inch pieces (about 2 cups or 250g)
  • 1 large russet potato, cut into ½ inch cubes (about 1 cup 150g)
  • 1 teaspoon kosher salt
  • ¼ cup (40g) roasted unsalted peanuts, crushed
  • 2 tablespoons fresh lime juice

Preparation

  1. Add oil, cumin, fennel seeds, onion, peppers into the Anyday dish and cover the dish with the lid (knob lifted).
  2. Cook for 4-5 minutes, or until vegetables have softened.
  3. Add the potatoes and spread evenly in the dish cover, and continue to cook for 7-8 minutes, or until potatoes are tender. Optional: if you’d like to char the vegetables, transfer this mixture to a baking sheet and broil until the peppers and potatoes turn slightly brown.
  4. Stir in the crushed peanuts and lime juice to taste.
