Ingredients
- 1 tablespoon sesame oil
- 1 small shallot, minced
- 1 clove of garlic, minced
- ½ small jalapeño, finely chopped
- ¾ cup (200ml) full-fat coconut milk
- 2 teaspoons cornstarch
- 1 tablespoon fish sauce
- 8 oz (225g) large shrimp, peeled and deveined
- ⅛ teaspoon kosher salt
- 1 lime, zested and juiced
- 1 tablespoon cilantro, roughly chopped (optional)
- Fried shallots, for topping (optional)
Preparation
- Combine oil, shallot, garlic, jalapeño, coconut milk, cornstarch, and fish sauce in the Anyday dish.
- Cover with the lid (knob lifted) and microwave for 3 minutes. Whisk to thicken the sauce.
- Add the shrimp and continue cooking for 4-5 minutes until the shrimp turns pink and is cooked through.
- Finish the dish with lime zest and juice, a pinch of salt, and cilantro if desired.
Serving suggestions & tips
- Add a spicy kick: Stir in Sambal Olek or your preferred chili paste for an extra spicy kick that enhances the flavor profile.
- Round out the meal: Add baby corn and straw mushrooms to the dish to introduce more texture and flavor, making it a well-rounded meal.
- Swap the protein: Substitute shrimp with chicken or tofu to suit your preferences. Just be sure to adjust cook times as needed for the protein choice.
- Make it lighter: Use light coconut milk instead for a lighter version of the dish. Note that the consistency will be more soup-like compared to using full-fat coconut milk.
