The Medium Shallow Dish

Ingredients

  • 1 tablespoon sesame oil
  • 1 small shallot, minced
  • 1 clove of garlic, minced
  • ½ small jalapeño, finely chopped
  • ¾ cup (200ml) full-fat coconut milk
  • 2 teaspoons cornstarch
  • 1 tablespoon fish sauce
  • 8 oz (225g) large shrimp, peeled and deveined
  • teaspoon kosher salt
  • 1 lime, zested and juiced
  • 1 tablespoon cilantro, roughly chopped (optional)
  • Fried shallots, for topping (optional)

Preparation

  1. Combine oil, shallot, garlic, jalapeño, coconut milk, cornstarch, and fish sauce in the Anyday dish.
  2. Cover with the lid (knob lifted) and microwave for 3 minutes. Whisk to thicken the sauce.
  3. Add the shrimp and continue cooking for 4-5 minutes until the shrimp turns pink and is cooked through.
  4. Finish the dish with lime zest and juice, a pinch of salt, and cilantro if desired.

Suggestions

  • Add a spicy kick: Stir in Sambal Olek or your preferred chili paste for an extra spicy kick that enhances the flavor profile.
  • Round out the meal: Add baby corn and straw mushrooms to the dish to introduce more texture and flavor, making it a well-rounded meal.
  • Swap the protein: Substitute shrimp with chicken or tofu to suit your preferences. Just be sure to adjust cook times as needed for the protein choice.
  • Make it lighter: Use light coconut milk instead for a lighter version of the dish. Note that the consistency will be more soup-like compared to using full-fat coconut milk.
