Dessert for breakfast or breakfast for dessert? You can have it both ways with this cross between French toast and bread pudding. Soft white bread is perfect for soaking up the cinnamon and vanilla-spiced custard, resulting in a gooey, decadent treat.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Small Dish

Ingredients

  • ½ cup (110ml) evaporated milk
  • 1 egg yolk
  • ½ teaspoon vanilla extract
  • ½ tablespoon sugar
  • teaspoon cinnamon
  • ½ tablespoon raisins (optional)
  • 2 cups (75g) diced soft bread, such as brioche or Hawaiian-style buns (about 3-4 Hawaiian slider buns if using)
  • ½ teaspoon butter, cut into small pieces
  • Maple syrup to serve

Preparation

  1. Add the evaporated milk, egg yolks, vanilla extract, sugar, cinnamon, and raisins (if using) into the Anyday dish and mix until well incorporated.
  2. Add in the bread and toss until fully coated with the egg and milk mixture. Spread in an even layer, then dot the butter evenly over the top. Cover with the lid (knob lifted).
  3. Cook in the microwave for 3 minutes, or until the mixture has slightly puffed up and it feels bouncy when gently pressed on top.
  4. Allow to cool slightly and enjoy with maple syrup!

Serving suggestions & tips

  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an easy dessert
  • Add 2 tablespoons of chocolate chips for an indulgent twist.
  • Enjoy it with fresh seasonal fruit over it such as strawberries, blueberries, peaches, pears, or bananas.
