We dare any salad skeptic to turn down this smoky, tangy vinaigrette. Bacon crumbles, sweet shallots, and sharp dijon form an addictive combination that's perfect for drizzling on greens, roasted veggies, eggs, and more. (We won't tell if you sneak a spoonful plain, either!)

Ingredients
- 4 slices thick-cut bacon, cut into a small dice
- 1 tablespoon chopped shallots
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- ½ teaspoon granulated sugar
- 1 tablespoon chopped chives
- Salt, as needed
- Black pepper, as needed
Preparation
- Add the bacon and shallots into the Anyday, making sure to spread into an even layer. Cover with lid (knob lifted).
- Cook in the microwave for 2-3 minutes, or until they begin to soften.
- Stir the bacon and shallot mixture and continue cooking for 2-3 minutes or until bacon pieces look crispy and the shallot is translucent.
- Add the remaining ingredients and whisk to combine. Enjoy while warm!
Serving suggestions & tips
- Try it as a dressing for spinach salad.
- Perfect condiment for steamed potatoes, asparagus, or cauliflower.
- Enjoy with poached eggs or a frittata.
Recipe notes
- If you don’t want to use the bacon fat in the dressing, you can strain the bacon after cooking and add 3 tablespoons of olive oil to finish the vinaigrette.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
