The Medium Shallow Dish

Ingredients

  • 2 tablespoons white wine or chicken stock
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice, plus extra for serving
  • 1 tablespoon butter
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon cornstarch
  • salt, to taste
  • black pepper, to taste
  • ½ lb (225g) large shrimp, peeled, and deveined
  • 2 teaspoons parsley, chopped (optional)

Preparation

  1. Add all ingredients except the shrimp and parsley to the Anyday dish and mix to combine.
  2. Cook in the microwave uncovered for 2-3 minutes, or until fragrant.
  3. Add the shrimp and stir until well-coated. Cover with the lid (knob lifted).
  4. Cook for 3-4 minutes (stirring halfway through), or until shrimp is orange and cooked through. If needed, continue cooking in 30-second intervals.
  5. Stir the shrimp to coat it in the sauce. Garnish with chopped parsley and a squeeze of lemon juice.
