To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • ½ tablespoon unsalted butter
  • ¼ cup (30g) carrots, diced 
  • 2 (25g) mushrooms, thinly sliced
  • 8 oz (225g) boneless chicken thighs, cut into 1” cubes
  • ¼ teaspoon salt
  • ½  teaspoon black or white pepper
  • ¼ teaspoon garlic powder
  • ¼ cup (60ml) heavy cream
  • ¼ cup cornstarch
  • ¾ cup (180ml) chicken stock
  • ¼ cup (30g) frozen peas
  • sheet of puff pastry, thawed
  • 1 egg yolk, whisked with a splash of water

Preparation

  1. Preheat oven to 400°F. 
  2. Place the butter, carrots, mushrooms, chicken, salt, pepper, and garlic powder in the Anyday dish and mix well. Cover with the lid (knob lifted). Cook in the microwave for 5 minutes, or until chicken is almost fully cooked.
  3. Add the cream, cornstarch, and stock and stir until fully incorporated. Cover and continue cooking in the microwave for 3-4 minutes, stirring halfway, until it thickens. 
  4. Add the peas and mix well. Cover the filling with a sheet of thawed puff pastry.
  5. Brush the dough with the egg wash and bake in a preheated oven for 15-20 minutes or until the dough is golden brown. Allow the pot pie to cool slightly before serving.

Serving suggestions & tips

  • Substitute the chicken for more veggies for a meatless option.
  • For a spicier dish, add a few dashes of hot sauce to the filling before topping with the dough.
  • Top it with mashed potato for Sheppard’s pie-inspired dish.

Recipe notes

  • Be sure to place the hot Anyday dish on a trivet or potholder after removing it from the hot oven.
  • Parent trick:
    - Adjust seasoning to a kids-friendly palate.
    - Freezing the filling allows you the flexibility of switching up meals throughout the week! Keep in the freezer for up to 6 months.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
