This chili recipe packs a lot of heat and flavor into one dish. We use all the classic ingredients — pinto beans, jalapeños, chili powder, tomatoes — plus diced pre-cooked hot links for ease. If you want your chili a little milder, any simple precooked sausage would work.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • 1tablespoon olive oil
  • ½ cup (60g) diced onion
  • ½ cup (60g) diced bell pepper
  • 1 medium jalapeño, seeded and small dice
  • 2 cloves garlic, minced
  • teaspoons chili powder
  • 1 teaspoon smoked paprika
  • salt, to taste
  • 1 (85g) precooked hot link, large dice (such as Evergood)
  • ½ 15.5oz can pinto beans, drained
  • ½ 14.5oz can diced tomatoes
  • ¼ cup (60g) chicken stock or water

Preparation

  1. Combine olive oil, onion, bell pepper, jalapeño, garlic, chili powder, smoked paprika, and salt in the Anyday dish. Cover with the lid (knob lifted).
  2. Cook in the microwave for  4 minutes, or until vegetables are tender.
  3. Add hot links, pinto beans, canned tomatoes (including juices), and stock. Stir to combine. Cover and cook for  6 minutes, or until chili has thickened slightly and flavors have melded.

Serving suggestions & tips

  • Finish with sour cream, cheddar cheese, and chopped fresh chives.
  • Serve over rice or corn chips.
  • Makes excellent leftovers — this chili is often even better the next day!

Recipe notes

  • Freeze the chili in the Anytime Freezer Trays and reheat as needed.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
