  • ½ lb (225g) baby potatoes, rinsed
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Sour cream for garnish
  • Chives or parsley for garnish

Preparation

  1. Preheat the oven to 450°F.
  2. Add potatoes, oil, salt, and pepper into the Anyday dish and stir to coat. Cover with the lid (knob lifted).
  3. Cook in the microwave for 4-5 minutes stirring halfway through, until potatoes are easily pierced with a fork.
  4. Evenly distribute potatoes on a baking sheet lined with parchment paper or aluminum foil. Using a fork, back of a spoon or the bottom of a measuring cup, gently smash each potato to about ½” height. (Thinner potatoes will be crispier!)
  5. Crisp in the oven at 450°F for about 20 minutes or until you see the potatoes’ edges become golden-brown and crispy. Season to taste.
