For the cake


  • 1-15.25 ounce box vanilla sprinkle cake mix, plus ingredients called for on the back of the box

For the frosting


  • 1 cup unsalted butter (2 sticks), softened
  • 2½ cups powdered sugar, plus more as needed
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Sprinkles, for decoration (optional)

Preparation

  1. Lightly grease an Anyday dish with cooking spray and line the bottom with a parchment paper circle.
  2. In a separate bowl, prepare the cake batter according to the package directions.
  3. For a 7” cake (Medium Deep or Medium Shallow): Pour half of the batter into the Anyday dish and microwave uncovered for minutes per cake, or until a toothpick inserted in the center comes out clean. Repeat with the remaining batter.
  4. Let the cakes cool completely in the dish before unmolding and frosting, about 10-15 minutes.
  5. While the cakes cool, prepare the frosting: In a bowl, whisk the butter (or mix with a hand mixer) until light and fluffy. Add powdered sugar, salt, and vanilla, and mix until smooth and creamy, about 5 minutes. If the frosting is too soft, add more powdered sugar in ½ cup increments.
  6. Once cooled, unmold each cake layer. Using a serrated knife, carefully slice each cake layer in half horizontally.
  7. Place one layer on a clean plate and spread an even layer of frosting on top. Repeat with the remaining layers. Cover the top and sides with the remaining frosting. Decorate with sprinkles, if desired.
