- 1 15oz can (425g) of canned black beans, drained
- 1 (25g) jalapeño, seeded and diced
- ¾ cup (230g) vegetable stock (or chicken stock)
- 1½ teaspoons chipotle adobo purée
- ½ teaspoon garlic powder
- 1 teaspoon dried oregano
- ¼ teaspoon ground cumin
- salt, to taste
Preparation
- Combine all ingredients in an Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for minutes, or until ingredients are fork-tender and the liquid is slightly thickened.
- Using an immersion blender, blend all ingredients until they are as smooth or as chunky as you like.
