Irish soda bread is a simple, hearty quick bread from Ireland, perfect for celebrating St. Patrick's Day. If you're in a pinch (are you wearing green?), make a quick-rising dough with baking soda, caraway, and currants. Portion into Anytime Freezer Trays, pop them into the microwave and cook on a lower power level for a gently steamed bun. It’ll be ready to serve with corned beef and cabbage!

Ingredients
- 2 cups (225g) all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon kosher salt
- 1 teaspoon sugar
- ½ cup (75g) currants, more if desired
- 1 teaspoon caraway seeds (optional)
- 1 cup (225ml) buttermilk
Preparation
- In a bowl, mix all ingredients together to form a dough. Be careful not to over-mix!
- Divide the batter into 6 pieces and transfer to 1/2 cup Anytime Freezer Trays. You will need to repeat the cooking process to cook all 6 buns.
- Gently press the tops with floured hands to even them out.
- Cook at Power Level 6tooltip for 4-5 mins until bouncy. If the bread is sticky on the sides, this is normal! The bun will dry as it cools down (it’s just steam). Repeat with the remaining dough.
- Serve with softened butter or preserves, or split to make a sandwich.
Serving suggestions & tips
- These buns make a delicious breakfast sandwich.
- Cut the buns in half and top with some butter, salt, and pickles.

Recipe notes
- To store them for later, cool the buns completely and freeze in the trays (covered) or use plastic-free storage bags.
- If buttermilk is not available, use kefir or whole milk instead.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
