Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • 1 tablespoon brown sugar
  • teaspoon freshly cracked black pepper
  • teaspoon cayenne pepper or chili flakes
  • 3-4 strips thick-cut bacon, cut in half

Preparation

  1. In a small bowl, mix the brown sugar, cayenne or chili flakes, and black pepper and set aside.
  2. Add as much bacon as you can fit in a single layer in the Anyday dish and sprinkle with the reserved sugar mixture.
  3. Cover with lid (knob lifted) and cook in the microwave for minutes, or until bacon is crispy. Always start with the lowest amount of time and continue cooking in 30-40 seconds increments until the desired doneness is reached.
  4. Enjoy while warm.

Suggestions

  • Add a pinch of cocoa powder for a sweet and smoky twist!
  • Substitute the cayenne for chipotle pepper powder, or omit all together.
  • Sprinkle with salt, sesame seeds, and minced dried onion for a sweet-and-savory take.
