The Anyhand Mitts
Ingredients
- 1 tablespoon brown sugar
- ⅛ teaspoon freshly cracked black pepper
- ⅛ teaspoon cayenne pepper or chili flakes
- 3-4 strips thick-cut bacon, cut in half
Preparation
- In a small bowl, mix the brown sugar, cayenne or chili flakes, and black pepper and set aside.
- Add as much bacon as you can fit in a single layer in the Anyday dish and sprinkle with the reserved sugar mixture.
- Cover with lid (knob lifted) and cook in the microwave for minutes, or until bacon is crispy. Always start with the lowest amount of time and continue cooking in 30-40 seconds increments until the desired doneness is reached.
- Enjoy while warm.
Serving suggestions & tips
- Add a pinch of cocoa powder for a sweet and smoky twist!
- Substitute the cayenne for chipotle pepper powder, or omit all together.
- Sprinkle with salt, sesame seeds, and minced dried onion for a sweet-and-savory take.
Recipe notes
- Why use a Shallow Dish? When cooking bacon in the microwave, the strips need plenty of room to lay flat. Our Shallow Dish features enough surface area for bacon to spread out, making it the perfect vessel for microwaving bacon. The silicone-lined lid keeps all of the bacon grease in the dish, not on your microwave’s walls!
- To make bacon bits for a salad topping, cook the bacon and then chop or crumble.
- Use leftover bacon fat to whisk into vinaigrettes, toss with potatoes for roasting, and sautéeing veggies.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
