Steaming mussels with the classic preparation of butter, white wine, and garlic brings out their natural saltiness. It's a one-pot meal that tastes like the ocean and makes you feel like you're streetside at a Parisian bistro, all at the same time. Mop up the juice with crusty bread before going back for seconds.

Ingredients
- ÂĽ cup (60ml) white wine
- 2 tablespoons unsalted butter, diced
- 1 tablespoon chopped parsley
- 2 garlic cloves, finely chopped
- 8 oz (225g) fresh mussels, beards removed and scrubbed
Preparation
- Clean the mussels: Place the mussels in a large bowl of ice-cold water that’s salted like sea water. Let sit for no longer than 2 minutes. Brush each mussel shell with a clean brush to remove debris if needed. Mussels should purge sand, which will sink to the bottom of the bowl, so be sure to remove carefully.
- Place all the ingredients in the Anyday dish and toss to combine. Cover with the lid (knob lifted). Cook in the microwave for 4-5 minutes, stirring halfway through, until all mussels have opened. Make sure not to overcook!
- Season to taste.
Serving suggestions & tips
- Serve with crusty bread if desired.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
