Steaming mussels with the classic preparation of butter, white wine, and garlic brings out their natural saltiness. It's a one-pot meal that tastes like the ocean and makes you feel like you're streetside at a Parisian bistro, all at the same time. Mop up the juice with crusty bread before going back for seconds.

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Dish

The Medium Deep Dish

Ingredients

  • ¼ cup (60ml) white wine
  • 2 tablespoons unsalted butter, diced
  • 1 tablespoon chopped parsley
  • 8 oz (225g) fresh mussels, beards removed and scrubbed
  • 2 garlic cloves, finely chopped

Preparation

  1. Clean the mussels: Place the mussels in a large bowl of ice-cold water that’s salted like sea water. Let sit for no longer than 2 minutes. Brush each mussel shell with a clean brush to remove debris if needed. Mussels should purge sand, which will sink to the bottom of the bowl, so be sure to remove carefully.
  2. Place all the ingredients in the Anyday dish and toss to combine. Cover with the lid (knob lifted). Cook in the microwave for 4-5 minutes, stirring halfway through, until all mussels have opened. Make sure not to overcook!
  3. Season to taste.

Serving suggestions & tips

  • Serve them with toasted crusty bread or classic french fries.
  • Add some hot sauce for a spicy dish.
  • Try it with light beer instead of wine.

Recipe notes

  • Stir halfway to ensure even cooking.
  • If any mussels remain unopened after the cooking time, discard them.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
