This dinner is a winner! A generous helping of bow-tie pasta and chicken steams all in the same dish. While you have a few extra minutes of downtime, mix up a quick bruschetta with cherry tomatoes, garlic, and basil. Finish the dish with fresh arugula for color and plenty of parmesan cheese!

Ingredients
For the pasta
- 2 (180g) chicken tenders, cut into medium size pieces
- 2 teaspoons olive oil
- ⅛ teaspoon paprika
- ¼ teaspoon kosher salt
- 1 cup (100g) farfalle (bow-tie) pasta
- 1½ cup (354ml) chicken stock
For the bruschetta topping
- 1 cup (150g) cherry tomatoes, halved
- 2 tablespoons olive oil
- ¼ cup diced red onion
- 6 basil leaves, thinly sliced
- 1 garlic clove, finely chopped
- 1 tablespoon balsamic vinegar or glaze
- 1 cup (15g) baby arugula (optional)
Preparation
- Add the chicken, olive oil, paprika, pasta, stock and salt to the Anyday dish and stir to combine.
- Cook uncovered for 12-13 minutes, or until the pasta is fully cooked.
- While the pasta cooks, mix the tomatoes, diced onions, basil, garlic, olive oil, and balsamic vinegar in separate bowl. Adjust seasonings to taste and set aside.
- Add the bruschetta topping in with the chicken and pasta, and mx well. Toss arugula into the pasta for extra color and freshness, if desired.
Serving suggestions & tips
- Double the bruschetta topping and store it separately for leftovers. Use it to top toasted bread, scrambled eggs, hot pasta, and more.
- Serve with plenty of parmesan cheese and a decent Italian wine!
- For a Mediterranean spin, add spinach, kalamata olives, and crumbled feta cheese.
- Opt for ready-to-use bruschetta topping or even mild salsa if fresh ingredients aren’t available.
Recipe notes
- For a pescatarian option, substitute the chicken with cubed sword fish or peeled and deveined shrimp.
- If the water overflows, you can switch to a Large Deep or Extra Large, or reduce to Power Level 8 and then continue cooking.
- Top the cooked pasta with mozzarella cheese and finish in a 450°F oven for a crispy topping.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
