Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

The Small Dish

Ingredients

For the sauce: 

  • 1 cup (120g) fresh or frozen mixed berries
  • ¼ cup sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons red wine

For the panna cotta:

  • ¾  sheet of gelatin or 1 ½ teaspoons of powdered gelatin
  • ½ cup (100ml) heavy cream
  • ¼ teaspoon lemon zest
  • 1 tablespoon sugar
  • ½ cup (100ml) buttermilk

Preparation

  1. Make the red berry sauce: Place the berries, sugar, cornstarch, and wine in the Anyday Dish and mix well. Cover with the lid (knob lifted). Cook in the microwave for 2-3 minutes. For frozen berries, double the suggested cooking time.
  2. Blend the sauce with an immersion blender or regular blender. You can also leave it chunky and simply press the fruit with a fork. Transfer to a separate bowl and set aside. 
  3. Make the panna cotta: Soak the gelatin sheets in ice-cold water and set aside. If using gelatin powder, make sure to dissolve the gelatin in twice the amount of water. Set aside.
  4. Wash out the Anyday dish and add the heavy cream, sugar, and lemon zest. Mix to combine. Cover and cook for 1-2 minutes, or until cream is hot.
  5. Remove the sheets of gelatin from the water and squeeze out the excess. Add the sheets to the heated cream and mix until fully dissolved.
  6. Add the buttermilk. Mix well, making sure to wipe the side of the dish. For a smoother surface, gently tap the Anyday dish onto a towel placed on the countertop until the bubbles disappear. 
  7. Allow the panna cotta to sit uncovered in the fridge for at least 3 hours (or up to overnight). Unmold or serve directly from the Anyday with berry sauce.

Serving suggestions & tips

  • Substitute the buttermilk for heavy cream for a classic panna cotta.
  • Substitute buttermilk for coconut milk for an extra creamy dessert.
  • Try any other citrus or vanilla extract.

  • This recipe can be made up to 5 days ahead. Keep it covered and refrigerated until needed.
  • If using frozen berries for the sauce, double the suggested cooking time.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
