To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • 1 (200g) chicken breast, diced in ½-inch chunks
  • ¾ (90g) red bell pepper, sliced
  • ¾ cup (120g) canned black beans, drained
  • 1 teaspoon chipotle or chili powder
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • salt, to taste
  • black pepper, to taste

Preparation

  1. Add all ingredients to the Anyday dish and stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for 10-11 minutes, or until the chicken is cooked through.
  3. Rest for 1 minute with the lid still on. Serve with tortillas and your favorite toppings.

Serving suggestions & tips

  • Substitute black beans with any beans of your choosing.
  • Top the bowl with cotija cheese, cilantro, and freshly squeezed lime juice.
  • Add some pickle jalapeños for an extra kick.

Recipe notes

  • Mix the ingredients and marinade overnight in the Anyday dish with the knob down for better flavor.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
