Looking for a comforting meal with a twist? This Chicken Marsala Casserole is your answer! The secret ingredient? Onion dip mix. It adds a rich, umami-packed seasoning — no added salt needed. Cooking the chicken at a lower power level offers tender, juicy results as it slowly absorbs the creamy sauce, making every bite irresistible and perfect for making ahead and reheating later. Using your Anyday dish guarantees faster, even cooking with less cleanup. Want a gluten-free option? Simply swap in gluten-free crispy onions or leave them out altogether.

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Small Square Dish

Ingredients

  • 1 tablespoon unsalted butter
  • 4 cremini mushrooms, sliced
  • 1 tablespoon onion dip mix (see recipe notes)
  • ¼ cup (60ml) dry Marsala wine
  • 2 tablespoons beef or chicken stock
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons heavy cream
  • 4 chicken tenders (225g)
  • ¼ cup (25g) crispy onions (optional)
  • Ground black pepper, as needed
  • Chopped fresh parsley (optional)

Preparation

  1. Combine butter, mushrooms, onion dip mix, Marsala wine, stock, Worcestershire sauce, and cornstarch in a Square dish and stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for 3-4 minutes, or until the sauce darkens and begins to thicken. Add the cream, stirring well to incorporate.
  3. Season the chicken with black pepper (be mindful of adding salt as the sauce is already seasoned). Add the chicken to the sauce, cover, and continue cooking in the microwave at Power Level 6tooltip for 8 minutes, or until the chicken is fully cooked.
  4. Top the casserole with crispy onions and garnish with fresh parsley, if desired.

Serving suggestions & tips

  • Tofu marsala: Swap the chicken for cubes of tofu and use mushroom or vegetable stock instead of beef. For extra flavor, use soy sauce or liquid aminos as a substitute for Worcestershire sauce.
  • Pork marsala: Use boneless pork cutlets instead of chicken. The rich sauce pairs perfectly with tender pork.
  • Spicy chicken marsala: Add red pepper flakes or Cayenne pepper to the sauce for a fiery kick. You can also mix in diced jalapeños or serrano peppers for an extra kick of heat.
  • Broccoli chicken marsala: Add fresh or frozen broccoli florets 4 minutes before the cooking time is finished for an extra serving of veggies.

Recipe notes

  • If you don’t have Marsala wine, try dry white wine, sherry, or a light beer.
  • If you don’t have onion dip mix on hand, you can make your own! Simply combine 2 tablespoons dehydrated onions, 1/8 teaspoon kosher salt, and 1/4 teaspoon ground black pepper per serving.
  • If ready-to-use crispy onions are not available, consider our recipe for Fried Onions.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.

All You Need to Know About Making Chicken Marsala in the Microwave

What is Chicken Marsala?

Chicken Marsala is a classic Italian-American dish featuring tender chicken cooked in a rich, savory sauce made with Marsala wine, mushrooms, and flavorful seasonings. It’s known for its deep, umami-packed flavors and creamy finish, perfect for pairing with buttered noodles and a glass of red wine.

Can I substitute the onion dip mix with something else?

If you don't have onion dip or soup mix, you can easily substitute with a blend of dehydrated onions, kosher salt, and ground black pepper. Simply combine 2 tablespoons dehydrated onions, 1/8 teaspoon kosher salt, and 1/4 teaspoon ground black pepper per serving. Alternatively, experiment with other seasoning blends like Italian seasoning or garlic powder to complement the flavors of the dish.

How long can I store the casserole?

This casserole can be stored in an Anyday dish with the lid on, in the refrigerator, for up to 3-4 days. Make sure to let the casserole cool completely before refrigerating to maintain its freshness and flavor. The airtight seal on the Anyday dish helps to preserve moisture, keeping your casserole as delicious as when it was first cooked.

Why do I make the sauce first?

Making the sauce first allows the flavors to fully develop, ensuring a rich, robust base for your casserole. It also gives the cornstarch enough time to thicken the sauce. If you want to make the sauce ahead of time, you can freeze portions in a silicone Anytime Freezer Tray and thaw when needed for easy meal prep!

Why do I need to lower the power level in this recipe?

Lowering the power level is essential to prevent overcooking and ensures that the meat turns out tender and juicy without any rubbery spots. This method allows the casserole to cook evenly and gently, resulting in a velvety sauce that is absorbed by the tender chicken. With an Anyday dish, you can cook with confidence, knowing the food retains moisture while evenly distributing heat. For more information about power levels, visit our blog here.

Can I cook this dish it without lowering the power?

While it's possible to cook the casserole without lowering the power, it's recommended to lower the power to avoid potential overcooking or burning. If you choose not to lower the power, keep a close eye on the casserole and start by reducing the cook time by half and adding more time as needed to prevent it from becoming too dry or overcooked. Some loud popping noises can occur as the chicken cooks rapidly.

How should I reheat Chicken Marsala Casserole?

Reheating the casserole is easy with an Anyday dish! Simply place the covered dish in the microwave and cook until heated through, for about 1-2 minutes. Be sure to stir halfway through for even reheating.

Can I freeze this recipe?

Yes, Chicken Marsala Casserole freezes beautifully! After making the recipe, allow it to cool completely. Cover with the lid and freeze for up to 3 months. When you're ready to enjoy it, simply place the dish in the microwave and reheat directly from frozen on full power for 4-8 minutes depending on serving size.
