Ingredients

  • 1 tablespoon unsalted butter
  • 4 cremini mushrooms, sliced
  • 1 tablespoon onion dip mix (see recipe notes)
  • ¼ cup (60ml) dry Marsala wine
  • 2 tablespoons beef or chicken stock
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons heavy cream
  • 4 chicken tenders (225g)
  • ¼ cup (25g) crispy onions (optional)
  • Ground black pepper, as needed
  • Chopped fresh parsley (optional)

Preparation

  1. Combine butter, mushrooms, onion dip mix, Marsala wine, stock, Worcestershire sauce, and cornstarch in a Square dish and stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for 3-4 minutes, or until the sauce darkens and begins to thicken. Add the cream, stirring well to incorporate.
  3. Season the chicken with black pepper (be mindful of adding salt as the sauce is already seasoned). Add the chicken to the sauce, cover, and continue cooking in the microwave at Power Level 6tooltip for 8 minutes, or until the chicken is fully cooked.
  4. Top the casserole with crispy onions and garnish with fresh parsley, if desired.
