The Small Square Dish

Ingredients

  • 4 cremini mushrooms, sliced
  • ¼ cup (30g) thinly sliced shallot
  • ¼ cup (60ml) white wine or dry Marsala wine
  • ¼ cup (60ml) beef or chicken stock
  • 1 teaspoon Worcestershire sauce
  • 4 oz (115g) top blade steak, cut into 1/2” strips
  • teaspoon ground black pepper
  • teaspoon kosher salt
  • 1 tablespoon cornstarch
  • ¾ cup (45g) medium egg noodles
  • ¼ cup (60g) sour cream
  • 2 teaspoons chopped fresh dill  (optional)

Preparation

  1. Combine the mushrooms, shallots, wine, stock, Worcestershire sauce, black pepper, salt, beef, and cornstarch in a Square dish. Cover with lid (knob lifted).
  2. Cook in the microwave at Power Level 10

    For many microwaves: enter the cook time, press the “Power” (or “Power Level”) button, and select a number between 1-10. Other microwaves may require selecting the Power Level first, and then entering the cook time.

    Microwaves list power levels in different ways. Here’s a guide to help you adjust:

    PL 10 = 100% = High (default)

    PL 9 = 90% = High

    PL 8 = 80% = Med-High

    PL 7 = 70% = Med-High

    PL 6 = 60% = Medium

    PL 5 = 50% = Medium

    PL 4 = 40% = Med-Low

    PL 3 = 30% = Med-Low

    PL 2 = 20% = Low

    PL 1 = 10% = Low

    You will know if the power level has been successfully changed if you hear periodic changes in the microwave’s tone after it begins cooking.

    for 8 minutes or until the meat is tender and the sauce starts to thicken.
  3. Stir in the noodles, making sure they are well-coated, and cover with the lid. Continue in the microwave at Power Level 10 for 5 minutes, or until the noodles are plump and tender.
  4. Mix in the sour cream and dill until fully combined and creamy. Garnish with more dill and serve.

  • Chicken stroganoff: Swap steak for chicken breast cut into 1/2” cubes and follow the cooking instructions.
  • Tofu stroganoff: to consider making homemade. Replace sour cream with plant-based Greek yogurt for creaminess.
