This easy, flavorful one-dish-meal is bound to become a go-to for cozy dinners and family gatherings. The beef gets tender as it simmers with mushrooms and shallots, creating a satisfying, hearty meal. By lowering the power level during cooking, the noodles absorb the savory beef stock, ensuring deep, rich flavor in every bite.

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

Serving suggestions & tips

  • Chicken stroganoff: Swap steak for chicken breast cut into 1/2” cubes and follow the cooking instructions.
  • Tofu stroganoff: to consider making homemade. Replace sour cream with plant-based Greek yogurt for creaminess.
  • Spicy stroganoff: Add a sprinkle of chili flakes for a spicy kick.
  • Tangy pickles: Garnish with pickled red onion, gherkins, or cauliflower to add a tangy brightness. Check out our pickle recipe for easy, quick options.

Recipe notes

  • Prepare this casserole up to 5 days in advance, but omit the sour cream. Add the sour cream after reheating, as it can curdle if exposed to high heat.
  • Looking to make this recipe alcohol-free? Simply substitute the wine for more beef or chicken stock.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.

All You Need to Know About Making Beef Stroganoff Casserole

What is stroganoff?

Stroganoff is a classic dish featuring tender meat (often beef) in a rich, creamy sauce made with sour cream, mushrooms, and onions. It’s a classic comfort food with a velvety texture, perfect for cozy dinners. We added egg noodles to our recipe to make it a delicious one-dish casserole. Who doesn’t love having fewer dishes to clean?

Can I make stroganoff in the microwave?

Absolutely! With an Anyday dish, you can prepare stroganoff all in one dish and cook it in the microwave. Our dishes are designed to ensure even cooking, so you can enjoy this classic dish without spending hours in the kitchen — and pop any leftovers right in the fridge with the lid on.

Why should I use top blade steak?

Top blade steak is a cut of beef from the chuck shoulder. It’s perfect for stroganoff due to its tenderness rich flavor and accessible price range It cooks up beautifully in the microwave, giving you that melt-in-your-mouth experience. If it’s not available, tri-tip or sirloin steak are good alternatives.

Why do I have to slice the meat?

By slicing the meat into thin, 1/2’ strips, you guarantee the best texture. By reducing the power level and cutting the meat into thinner pieces, the beef will cook quickly and evenly.

Can I use something other than sour cream?

Definitely! If you need an alternative, try Greek yogurt, coconut cream, or cashew cream. These substitutes provide a similar creamy texture and tangy flavor in this dish.

Can I make this dish gluten-free?

Yes, you can easily make this dish gluten-free by using your favorite gluten-free pasta. Just rinse the uncooked pasta before adding it to the dish to avoid any excess starch that could thicken the sauce too much.

Can I prepare the dish ahead of time?

Yes, you can prepare this dish up to 5 days in advance. Cook it according to the recipe (skipping the sour cream)  and allow cool completely. Cover with the lid and store it in the refrigerator in an Anyday dish. When ready to serve, reheat the casserole in the microwave and stir in the sour cream. With Anyday dishes, storing and reheating is a breeze!

How long can I store beef stroganoff in the refrigerator? Can I freeze it?

Beef stroganoff stays fresh for up to 3-4 days in the refrigerator when stored in an Anyday dish with the lid on. Allow the dish to cool completely before refrigerating and add the sour cream after reheating for the best texture. For longer storage, you can freeze beef stroganoff for up to 3 months! Just let it cool completely and freeze in the Anyday dish, covered with the lid.

What’s the best way to reheat stroganoff?

For reheating from the refrigerator, place the Anyday dish directly in the microwave and heat for 1-2 minutes per serving size, stirring occasionally until hot. If reheating from frozen, put the Anyday dish in the microwave and reheat on full power for 4-8 minutes, depending on serving size.
