A weeknight classic, reimagined for the microwave! It’s important to use lean ground beef in this recipe to avoid excess fat pooling in the bottom of the dish.

Ingredients
- 8 oz (225g) lean ground beef
- ½ cup (60g) onion, finely minced
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon dried thyme or oregano
- ¼ cup (20g) bread crumbs
- 1 tablespoons Worcestershire sauce
- 1 large egg
- ¼ cup ketchup
- 2 tablespoons brown sugar
Preparation
- In a mixing bowl, combine beef, minced onion, garlic powder, black pepper, salt, thyme or oregano, bread crumbs, Worcestershire sauce, and egg, and mix well. Pack the mixture in the Anyday dish, pressing to create an even surface.
- In a small bowl, mix the ketchup and brown sugar. Brush the top of the meatloaf with half of the sauce, reserving the rest.
- Cover with lid (knob lifted) and cook for 5-6 minutes or until the meat is fully cooked. Brush or spread the remaining sauce on top of the meatloaf while hot.
- Allow the meatloaf to rest for 5 minutes before serving.
Serving suggestions & tips
- Mix up the meats! Incorporate different flavors by using half ground pork or lamb.
- For a leaner option, substitute beef for ground turkey or use half beef and half turkey.
- For a Southwestern kick: Add diced cheddar cheese and jalapenos to the meatloaf mixture. Add 1 tablespoon chipotles in adobo sauce to the glaze.
Recipe notes
- It is important it is lean ground beef, if the beef is too fatty then the loaf comes out floating in a pool of fat.
